Rustic Sourdough Bread Recipe

Ingredients:

  • 500g all-purpose flour
  • 350ml water (lukewarm)
  • 100g sourdough starter (active)
  • 10g salt

Instructions:

  • Mix Ingredients:

    • In a large mixing bowl, combine the flour, water, and sourdough starter. Mix until all the ingredients are combined. Cover with a damp cloth and let it rest for 30 minutes.
  • Add Salt:

    • After the resting period, add the salt and mix it into the dough thoroughly.
  • Bulk Fermentation:

    • Cover the bowl with a damp cloth and let the dough rise at room temperature for about 4 to 5 hours, or until it has roughly doubled in size. Perform a series of stretch and folds every 30 minutes for the first 2 hours to strengthen the dough.
  • Shape the Dough:

    • Turn the dough out onto a lightly floured surface and shape it into a round loaf. Place the dough in a well-floured proofing basket or on a baking sheet lined with parchment paper.
  • Final Proof:

    • Cover the dough loosely with a cloth and let it proof for another 2 to 3 hours, until it has noticeably puffed up.
  • Preheat Oven:

    • At least 30 minutes before baking, preheat your oven to 230°C (450°F). If you have a baking stone, place it in the oven to preheat as well. You can also place a pan at the bottom of the oven to create steam.
  • Bake:

    • Score the top of the dough with a sharp knife or a lame. Transfer the dough (with the parchment paper if using a baking sheet) directly onto the preheated stone or leave it on the baking sheet.
    • Add a cup of water to the hot pan at the bottom of the oven to create steam. Close the oven door quickly to trap the steam.
    • Bake for 35 to 40 minutes, or until the crust is deeply golden and the loaf sounds hollow when tapped on the bottom.
  • Cooling:

    • Remove the bread from the oven and let it cool on a wire rack for at least an hour before slicing.
